Pierre Dukan’s free protein diet with recipes: steps and essence for losing weight
Because the variety of different weight loss methods simply rolls over the parameters of human memory. There are diets based on one product – cabbage, pumpkin, celery, etc. There are complex diets that include not only nutritional rules, but also sports activities, medical procedures… How does this diet differ from them?
The Pierre Dukan Diet is a not-so-new way of eating that results in weight loss. Why not new? Because our ancestors used it. So, what is the essence of the Dukan diet? And the point is to return to the prototype of the nutrition of our distant predecessors, who ate only vegetables, meat and proteins. Of course, in the conditions of the current civilization, which offers various very tasty, but not very healthy products, it is difficult to adhere to this diet. But no more difficult than in any other diet. Maybe even easier than some. The fact is that when losing weight according to the Dukan method, you can eat as much as you want, without limiting yourself in portions. And this, you see, is very pleasant. Under this condition, no special psychological discomfort is experienced.
This diet has another interesting feature: the time of "sitting" on a diet is divided into four phases or, as they are also called, stages. Each stage has a specific name, meaning and has its own set of rules.
Stages of the Dukan Diet
The Dukan Diet has stages that help you lose weight in a balanced and correct way. Of course, their presence complicates the whole scheme a little, and it becomes more difficult to follow all the principles. But if you're in the mood for results, it's worth it. So, the Dukan diet has 4 stages. Here they are:
Stage 1 – Attack. This stage is the shortest, but its mission is very important – it is a quick drop in kilograms (or grams – for everyone). The Dukan diet during an attack involves the presence in your diet of foods that are characterized by a large amount of protein. You should only consume these foods. This allows you to make a powerful blow to excess weight, you make an attack, you attack your problem and, if not exterminate, then at least cause irreparable damage to it. That is, you lose extra pounds. Usually it is from 1 to 5 kg.
Stage 2 – Cruise. This stage has a slightly different goal, it should bring your body not just back to normal, but to true weight. What does it mean? This means that if your body needed to lose 20 kg, and in the first phase you lost only 2, then on the Cruise you will have to part with another 18. The Cruise phase has no clear time limits and therefore can last up to 2-3 months, everything will depend on your build and the number of extra kilos. By the way, Cruise is also called Alternation. And this is well justified. During this period, you alternate between purely "protein" days with "protein-vegetable" days. You cruise from one day to the next, from one type of food to another. The Dukan Diet allows you to eat any vegetables during the Vegetable Day Rotation, except for potatoes and other starchy foods.
Stage 3 – Consolidation. This stage brings your body to "reconciliation" with its new weight. How? By merging your usual diet and nutrition in previous periods (stages) of the diet. The duration of this stage is also individual. It depends on your weight loss results in the first two phases. To calculate how much time you need to complete the Consolidation, you can use the following formula: K = 10X, where K is the number of days of Consolidation, and X is the number of kilograms lost. Thus, if you lost 5 kg during the Attack, you will be stuck in the Consolidation phase – for 50 days!
Stage 4 – Stabilization. Here, the processes of stabilization of the system as a whole take place. You bring your weight to a constant, that is, you make sure that excess weight no longer returns to your body. This stage does not take so much time, but is almost the most important in the weight loss system.
List of allowed foods on the Dukan protein diet
As you can see, each stage has its own goal and "means", that is, products. Products that will be your indispensable assistants on the way to a beautiful and slender body. What foods are allowed for the Dukan diet? Here is their list:
Attack:
- lean meat that needs to be grilled, baked in the oven;
- various offal (liver, kidneys);
- poultry meat, only peeled (duck and goose meat is strictly prohibited);
- seafood, fish of various varieties;
- dairy products with low fat content;
- eggs (no more than 2 pieces per day);
- 1 teaspoon of bran per day.
Alternation:
- for protein days, the products remain the same as during the Attack.
- no more than 1 kg. dairy products per day;
- 2 tbsp. spoons of bran per day;
- tomatoes;
- radish;
- cucumbers;
- string beans;
- pumpkin;
- onion;
- cabbage;
- eggplant;
- mushrooms;
- zucchini.
Consolidation:
- products of the "Attack" stage;
- products of the "Alternation" stage;
- fruits (exception: cherries, bananas and grapes);
- bread – 2 slices a day, preferably in the form of crackers;
- low-fat cheese – 40 g;
- potatoes or pasta, but no more than 2 times a week.
Stabilization:
- you can eat everything.
True, there are some rules that still relate to the period of "Stabilization" – this is the use of 3 tbsp. tablespoons of oats a day, and one day a week should be devoted to eating protein alone. The author advises to choose Thursday for this.
As you can see, the Dukan diet for weight loss is very effective. It perfectly burns extra pounds, however, while taking a lot of time. In essence, this method of losing weight is very similar to the famous complexes "Kremlin" and "American Astronauts", but there are differences, this is very clearly visible from the list of products.
The Dukan diet has a menu that can be adjusted depending on your preferences, but according to the list of allowed foods. The menu allows you to follow the rules more clearly and not deviate from the principles of weight loss. Of course, you can make your own menu, but it's better to take this option as a template and adjust it for yourself.
Stage 1 – Attack.
First option:
- Breakfast: boiled hard-boiled chicken egg – 1 piece, fat-free cottage cheese, 1 teaspoon of bran.
- Second breakfast: a few pieces of chicken, steamed, without skin;
- Lunch: 300g grilled turkey, 90g low fat cottage cheese;
- Afternoon snack: 0.5 teaspoon of bran, 50 g of cottage cheese;
- Dinner: 80 g boiled lean veal, 75 g fish, hard-boiled chicken egg – 1 pc.
Second option:
- Breakfast: black tea without sugar, scrambled eggs made from the proteins of 2 chicken eggs and 30 ml. skimmed milk;
- Second breakfast: cottage cheese – 80 g, 0.75 teaspoon of bran;
- Lunch: oven-baked chicken – 180 g, low-fat yogurt – 70 g;
- Afternoon snack: boiled shrimp – 90 g;
- Dinner: boiled veal – 70 g, steamed fish cakes – 120 g, 0.75 teaspoon of bran.
Each of these options can be used in turn, or you can choose only one. If you want to slightly adjust this menu, then remember that this is a purely Dukan protein diet, which means that there should not be any extra intake into the body.
Stage 2 – Cruise (Alternation).
Protein day:
- Breakfast: 1 cup black tea, 120 g grilled salmon;
- Lunch: skinless boiled chicken, a glass of skimmed milk;
- Snack: boiled chicken egg – 1 pc., 2 teaspoons of bran;
- Dinner: Any offal – 100 g, lean boiled fish – 120 g, black tea.
Protein and vegetable day:
- Breakfast: shrimp omelet – 120 g, 1 glass of tea;
- Lunch: boiled veal – 120 g, stewed zucchini – 70 g, fresh tomato – 1 pc.;
- Snack: fat-free cottage cheese, one hard-boiled egg;
- Dinner: Stew of permitted vegetables – 170 g, chicken baked in the oven – 120 g.
Stage 3 – Consolidation.
Here you need to alternate between pure protein days and protein-vegetable days. Therefore, it is imperative to adhere to this menu. You can adjust it for yourself, but keeping the big picture: one day – proteins, the second day – proteins and vegetables. By the way, you can also alternate periods – a week of proteins, a week of vegetables and proteins, but, as those who have passed this diet advise, it is better and easier to alternate one day.
First option:
- Breakfast: Omelet with boiled chicken meat – 100 g, green tea – 1 glass, shrimps – 20 g;
- Lunch: a slice of bread – 25 g, vegetable soup, grilled pork – 120 g, 30 g of hard cheese.
- Snack: fat-free cottage cheese, fruit, 2.5 teaspoons of bran;
- Dinner: chicken baked in the oven – 150 g, salad of allowed vegetables – 80 g, apple – 1 pc., tea.
Second option:
- Breakfast: a glass of green tea, 25 grams of low-fat cheese, one hard-boiled chicken egg;
- Lunch: potatoes baked in the oven – 2 pcs. medium size; grilled chicken – 125 g, fruit tea – 1 cup;
- Afternoon snack: 2.5 teaspoons of bran, boiled shrimp, tomato and eggplant salad – 80 g, bread – 25 g;
- Dinner: boiled meat (veal) – 120 g, rice – 70 g, vegetable salad – 110 g, bread – 25 g, a glass of tea with lemon, one pear.
Here you can use any of the options you like, alternate them or slightly correct them. After all, the Dukan diet is an approximate menu that you must adjust for yourself, the main thing is to follow the rules.
Stage 4 – Stabilization.
First option:
- Breakfast: buckwheat porridge cooked on water – 70 g, a piece of cheese – 25 g;
- Lunch: boiled bean pods – 100 g, chicken baked in the oven – 70 g;
- Snack: one apple, cottage cheese – 45 g;
- Dinner: baked fish – 80 g, vegetable salad – 120 g, a glass of cold fruit tea.
Second option:
- Breakfast: boiled chicken egg – 1 pc., tangerine – 1 pc.;
- Lunch: cabbage, carrot and beet salad – 85 g, a slice of bread – 25 g, cheese – 15 g, tea – 1 glass;
- Snack: buckwheat porridge, one small apple;
- Dinner: boiled veal – 120 g, vegetable salad – 150 g, black tea – 1 glass.
- Here you can also alternate or combine two power options.
Pros and Cons of the Dukan Diet
Like any diet, the weight loss method of the French nutritionist Pierre Dukan has its advantages and disadvantages.
Pros:
- allows you to lose weight, even when the body has “immunity" to diets;
- quick first results that allow restless people to get an incentive to continue;
- the diet is not too strict, it allows you to develop culinary imagination;
- convenience of eating: no time and portion restrictions;
- you can follow simple rules both at home and at work;
- delicious diet: you don't have to try to eat something awkward like cabbage with raspberries, honey and kefir;
- good results at the end of the diet;
- The Dukan diet is distributed free of charge, you do not need to pay for access to its rules, calculations of individual indicators!
Minuses:
- during the diet, ketone bodies are produced, which are designed to suppress the feeling of hunger, and this is fraught with a feeling of fatigue and headache in the first 2-3 weeks;
- Pierre Dukan's diet does not replenish the body with useful substances and vitamins to the proper extent, therefore, an additional intake of multivitamins is necessary;
- too little intake of fats in the body, this deficiency should be filled by taking fats of vegetable origin;
- you need to cook on a diet, and those who do not like this process will quickly get tired of it, because you need to cook every day and every day is different;
- duration of the diet: Dr. Dukan's diet is one of the longest, and many simply do not have the patience to see it through.

Attack Recipes
Recipes for Attack in the Dukan diet are based on the main rule – only proteins. None of the above recipes contradicts this restriction. But this does not prevent you from creating full-fledged culinary masterpieces.
Salad "The sea worries once…"
You will need: 100 g shrimp, 1 tbsp. a spoonful of 0% fat kefir, a chicken egg – 1 pc., a teaspoon of mustard.
Preparation: boil the shrimp and discard on a sieve. Mix kefir with mustard and egg yolk. Whisk the protein into foam. Add everything to the shrimp and simmer for 5-7 minutes over low heat.
Shish kebab "Dyukanski"
You will need: about 700 g of skinless chicken fillet, 120 g of small tomatoes, 140 g of bell pepper, fat-free kefir – 250 ml, 20 g of garlic.
Preparation: Peel the garlic and run it through a garlic press. Mix garlic slurry with kefir. We insist 20 minutes, then we take a plastic bag and pour this mixture into it. Add in the chicken pieces as well. We close the package and leave for 2-3 hours for pickling. After this time, remove the meat from the marinade and squeeze. Cut the bell pepper into squares. Tomatoes must be left whole. Take skewers and string chicken, tomatoes and bell peppers alternately on them. Preheat the oven. Lay a silicone mat on the baking sheet and place the skewers on it. Make a few shallow cuts on the chicken pieces and place the sheet in the oven. Turn the skewers from time to time so that the meat cooks evenly on all sides.
Recipes for Alternate (Cruise)
Here are Dukan diet recipes that are suitable for protein-vegetable days of the diet, as you can find pure protein recipes above.
Cabbage rolls "China-ducks"
You will need: Chinese cabbage leaves in the amount of 5-6 pieces, 240 g of carrots, onions – 120 g, 2 cloves of garlic, tofu about 160 g, 2 tbsp. spoons of bran and the same amount of soy sauce, chicken egg – 1 pc., salt and pepper.
Preparation: Take cabbage leaves and cut off their thick stems. Take a carrot and grate it on a fine grater. Chop the onion and press down with a press for 2-3 minutes to release the juice. Cut up the tofu. Take a deep cup and combine all these ingredients. Season with salt, pepper and sauce. Add finely chopped garlic and raw egg. This is your filling. Take cabbage leaves and wrap stuffing in them. Boil for about 20-30 minutes over medium heat.
Salad "Fresh idea"
You will need: medium-sized fresh cucumber, 120 g tomato, 2 chicken eggs, crab sticks – 5 pcs.
Preparation: Cucumbers cut and pour over boiling water. Chop the tomatoes. Hard boil the eggs and chop them too. Cut crab sticks very finely. Combine everything in one bowl and fill with low-fat cottage cheese.
Recipes for Consolidation
Here you can afford to relax a little. Fine dishes just pamper you! And you – enjoy!
Dairy fish casserole
You will need: canned pink salmon without oil – 1 can, chicken eggs – 3 pcs., 60 ml skimmed milk, parsley and dill.
Preparation: put the fish on a separate plate and mash with a fork. Eggs must be mixed with milk and beat well with a whisk. Finely chop parsley and dill and add to milk with eggs. Add mashed fish here. Take a mold, preferably silicone, and pour this mixture into it. You can bake in the microwave or oven. In the microwave at the maximum bake for 5 minutes, in the oven – for 15-20 minutes.
Soup "Pumpkin"
You will need: pumpkin pulp – 900 g, onion – 150 g, garlic – 3 cloves, tomatoes – 450 g.
Preparation: Cut pumpkin pulp and tomatoes into cubes, onion into rings. Place all these products on a baking sheet. Randomly arrange the cut garlic cloves. All this must be poured with oil. Preheat oven to 200°C. Place a baking sheet in the oven for 15-20 minutes, then remove the sheet and turn the baked products over. Return the baking sheet to the oven for another 15-20 minutes. Take out the sheet with vegetables, remove the skin from the tomatoes. Place all baked foods in a blender and puree until smooth. Take a saucepan and put the prepared vegetable puree into it. Salt, pepper. Pour in 400-500 ml. water and bring to a boil.
Borscht "Cold but not hungry"
You will need: lean beef – about 400 g, beets – 200 g, cucumbers – 250 g, eggs – 2 pcs., green onions, salt, pepper.
Preparation: take a saucepan with a capacity of 2-3 liters, pour 1/3 cold water into it. Put the unpeeled beets into a saucepan. Boil. Remove the beets and add cold water to the broth. Water must be boiled. The water level in the pot is 2/3 of the capacity. Cool to room temperature. Peel and grate the beets on a coarse grater, finely chop the cucumbers, boiled eggs, green onions. Separately, boil the beef and cut it into cubes. Add everything to the beetroot broth, mix, season with spices.
Recipes for Stabilization on the Dukan Diet
Recipes for Stabilization on Dr. Dukan's diet are distinguished by overall richness, a brighter combination of ingredients and taste. They are fun to cook and even more fun to eat! Such dishes can be used in your daily "non-dietary" life.
Chocolates "Dyukanski"
You will need: 3 tbsp. spoons of milk, 3 tbsp. tablespoons of cocoa powder (all fat-free), 2 teaspoons of any sugar substitute.
Preparation: Take all the ingredients and combine in one bowl. Mix with a mixer until a light foam forms. The resulting mass must be poured into pre-prepared molds. Place the molds in the refrigerator for about 4-5 hours. Depends on the temperature in the refrigerator. After 5 hours the chocolate is ready to eat.
Dish "Beef fire"
You will need: lean beef – 1200 g, non-carbonated mineral water – 1 cup, kefir with 0% fat content – 800 ml, mustard – 2 teaspoons, onion – 250 g, garlic – 100 g.
Preparation: the beef pulp must be cut into small thin plastics, no more than 4 mm thick. Rub each plastic with salt and pepper. Put all the meat in a deep bowl and fill with mineral water. Leave for 1 hour to marinate. During this time, you can prepare the sauce. To do this, you need to mix kefir with mustard. By the way, you can take more mustard, then the dish will be sharper. Therefore, if you want something spicier, feel free to add the amount of this ingredient. Now finely chop the onion and pass the garlic through a garlic press. Mix onion and garlic. When the meat is marinated, remove it from the dishes and coat in kefir-mustard sauce. Place half of the beef on a baking sheet and sprinkle onion and garlic on top. Cover it all with the other half of the meat. Cover with foil and place in the oven. The oven must be preheated to 180°C. The meat will bake for 50 minutes. Beef can be served as a separate dish or with a side dish.
Grilled chicken fillet "We warm the soul"
You will need: 500 g chicken (fillet); fat-free kefir – 180 ml., lemon – 1 pc., salt and spices.
Preparation: chicken fillet must be cut into small pieces. Put it in a bowl and pour kefir. Add salt, 3 drops of lemon juice and spices to taste. Mix well and refrigerate for 2.5 hours. Then put the meat on a grill pan and put on fire for about 15-25 minutes.
Cutlets "Liver Paradise"
You will need: liver – 300 g, chicken egg – 1 pc., onion – 150 g, corn starch – 0.5 teaspoon, salt and pepper.
Preparation: Chop the onion very finely. Put in a pan and add some water. Simmer and put on a plate, let cool. Cut the liver into cubes 1×1 cm, cut the egg. Take a bowl and combine onion, liver, egg and starch in it. Mix thoroughly and add spices. Mix again. Form small patties with a spoon and place them in the pan. Fry on both sides, gently turning over with a wide spatula. Cutlets can break, so be extremely careful. The dish is ready. Fat-free cottage cheese can be added to cutlets, replacing the taste of creamy sauce with it.
Conclusions on the Dukan diet and my feedback
As you can see, the diet is very interesting, though too long and forcing to cook. But for those who like to dream up and really want to lose weight – it is quite suitable. And most importantly – the Dukan diet is free! You do not need to pay for access to "secret" data, you can use it right now. And it's nice. As for the saturation of the diet, it is "dim" in the first period. But this can be done in the following three steps. Well, if you want to lose weight quickly, then this diet is not for you, nor is it for you if you want a simple and hassle-free method of losing weight. But if you are ready to diet for a long time and diligently, and even cook a variety of dishes, then the Dukan diet is for you!
